Dosa is one of the most favourite breakfast dishes of India. This South Indian delicacy has taken place in many people’s lives across India and worldwide too.
There are many types of dosa and one of the yummiest ones is Set Dosa.
I have had this set dosa for the very first time in Pune. I had gone to an Udipi restaurant called Roopali on FC Road and just fallen in love with that set of 2 set dosas. I never found the same kind of dosa near me.
They were too soft and fluffy. And were loved by my baby too.
Since then I was looking for the perfect recipe to make it at home. I went through 3-4 different versions and finally created this one.
I must say the Set dosa of that Roopali restaurant is still unforgettable. But can compromise with this self-made soft fluffy dosas till the time I visit Pune again.
1 bowl thick / mota poha (thick rice flakes)
1 and half bowl rice (any thick variety which is been used for idli and dosa)
1 cup curd
1 & half cups water
salt as per taste
Oil for frying (Preferably Ghee for kids)
1 tsp Eno (unflavoured / regular) or baking powder
Wash rice and poha properly. Mix them in a pot.
Add curd to it and give it a mix.
Now add water as required just that poha and rice will get soaked properly.
Keep this mixture overnight.
Next day grind this mixture to very smooth batter, add water to make it thin.
It should not be as thick as normal dosa batter.
Add salt as per taste.
Add eno / baking powder and mix well. Don’t mix too much that the bubbles will get vanished.
Now heat a griddle.
apply some oil / ghee. Pour the mixture at the center of the griddle and it will get spread to a round shape.
Cover it with a lid. And let it cook for few minutes.
You will be able to see that dosa has become fluffy and some small holes are visible on the dosa.
Now turn it to the other side. cook properly from both the sides.
Remove it on a kitchen stand so that steam will get removed and dosa will not become soggy.
And then serve it in plate with coconut chutney.
You can carry these dosas for traveling as they remain soft for 7-8 hours.
PS: Thin batter gives super fluffy and spongy set dosas.
