I was introduced to this smoothie when I was pregnant. It was said to have saffron is good for a pregnant mother and the baby. So trying the recipes with saffron was my mission and I landed to this amazing blend of taste and health.
Since then, this recipe is being the most favorite winter delicacy of the four generations in my family. Everyone eagerly waits for it, and I am sure I end up making it at least 10 times in the entire winter season.
It is best made with the seasonal carrots which are bright red in color rather than the orange ones which we get throughout the year. Now the long, red, sweet carrots are best for this recipe and they have entered the local markets now so forces me to have this winter delicacy again.
Another key ingredient is Saffron (Kesar), that gives the golden color to this aromatic drink. Saffron has several health benefits for young and adults. And in Asian and Middle East countries, saffron is added to the pregnant woman’s diet due to numerous health benefits to the mom and the baby.
2 diced Carrots (Preferably Red carrots which are available in winter only and are sweet in taste)
1 cup milk
4-5 teaspoons sugar
9-10 strands of saffron
Almond – Pista ( finely chopped) for garnishing
Method of Zaffrani Carrot Smoothie Recipe
Mix all the ingredients in milk.
Boil milk with carrot, sugar, saffron till the carrots become soft.
Allow this to cool down and blend the mixture in a blender / juicer.
Pour in tall glasses.
Refrigerate for an hour or two. (Or you can refrigerate the mixture for an hour and blend it later)
Garnish with chopped almond, pistachios, few saffron strands and serve chilled.
This healthy smoothie is a must have for winter. And it will be loved by all for sure, including the kids.
For a twist, you can serve it with vanilla ice-cream scoops.
